🤔 Did you know that there are 2 types of retarder proofer? The one that I am using comes in 3 modes which are freezer mode, chiller mode and proofing mode. Unless your bakery operates everyday, you can opt for the chiller and proofer type where you would transfer the frozen dough from your separate freezer into the retarder proofer overnight for next day use. 🧑🏼‍🍳 For me however, whenever I have an off day I still can transfer the frozen dough into my retarder proofer where it will still kee
